Christmas Morning Breakfast
I’ll admit that I didn’t grow up with these….but I have been making these for breakfast since my oldest daughter was born….this will be the 17th Christmas that Sausage Balls have been our “must-have” for Christmas Morning, I thought I’d share….
Ingredients:
1-pound ground sausage (you choose - mild or spicy (we like mild!)
3 cups Bisquick
4 cups grated Cheese - I use Colby Jack
1/8 tablespoon pepper
Instructions:
Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray.
Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls.
Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking.
We always sneak a few as they come out of the oven…but the rest go into the ‘fridge….and on Christmas morning, while the coffee is brewing, I warm up a few in the microwave…

We are in touch! We’ve been doing sausage balls on Christmas morning for years and years. It so much a part of our tradition now that people freak out if they don’t get sausage balls while opening presents. (See http://fitzfamilynet.googlepages.com/recipes:sausageballs for the full story!) How did sausage balls become a Christmas morning ‘must’?? It’s a mystery….
